When I was looking for this recipe, I found more than one recipe to make egg noodles at home, so I’ll try to get the most wanted recipes and put them in this article to be able to cook them one way or another as you like.
Egg noodles
First of all, you need to prepare some things and tools to make this recipe:
- 3 cups of flour
- 3 egg yolks and 1 large eggs
- Half teaspoon of salt
- Water
- Cup of milk and one spoon of olive (optional)
The 1st step you should begin with is to put three cups of flour into a bowl. Then you should make a hole in the center of the dough to make a place for the rest of the ingredients.
Preparing the dough
Then, add the eggs, and salt to the flour in the center of the bowl to ease up the process of mixing the ingredients together. Some recipes add water or milk to the former ingredients and a spoon of olive oil or other oil types.
Mixing the ingredients
You can use a fork or even your hands if they were clean with short nails to smooth the eggs in the center and mix the flour gradually. Once the flour is mixed, form a round circle and begin kneading the dough till you get a whole smooth mixture.
You should then wrap it in plastic and let it refrigerate from twenty minutes to six hours so that the gluten would relax. This process will make it easier for you to work.
The next step is to put some flour on the surface not to get stick to the table, Take the dough from the bowl, unwrap it and make it flatten to about 1/2 inch thick.
Get a rolling stick or rolling pin to make it run through the dough from the middle, folding the dough once and again till it gets formed.
Cut the dough into 6-7 inch long pieces; roll up each piece and cut into 1/2 inch wide strips using a knife or pizza cutter. For narrow noodles: Cut the dough crosswise into 1/8-inch strips and 1/4-inch for wide noodles.
Then, boil the noodles in a large pot of salted water for two minutes; drain and serve.
You have got more than one recipe of egg noodles as there is a recipe has only eggs and flour but there are others contain milk, water, and oil to them. I think they are more than enough for many food tastes.
